Ingredients
For the chicken
- 1 pound chicken breast or thighs cut into bite-size pieces
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon crushed black pepper
- 1 tablespoon olive oil
For the stroganoff sauce
- 1 tablespoon butter
- 1 onion chopped
- 10.5 ounces mushrooms sliced
- 2 tablespoons all-purpose flour
- 2 cups low-sodium chicken broth
- ½ cup sour cream
- 1 1/2 tablespoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Dice the chicken into small pieces and put it in a bowl. Mix it with onion powder, garlic powder, black pepper, and salt.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken pieces, and cook until crisp, golden, and evenly cooked from the inside. Once done, transfer the chicken to a plate and set it aside.
- In the same pan, add 1 tablespoon of butter and let it melt. Add the chopped onions and cook it for 1 minute. Then add in the mushrooms.
- Cook mushrooms until golden, about 5 minutes. Sprinkle on the flour and cook while stirring for 1 minute.
- Add the chicken broth a little at a time, stirring to ensure no lumps. Bring the sauce to a simmer. Then, reduce heat to medium.
- Take the skillet off the heat and stir in the sour cream, mustard, salt and pepper.
- Add the chicken and put it back on the heat to simmer it for another 1-2 minutes.
- Serve hot over pasta or with bread sprinkled with chopped parsley.
