Ingredients

  • 1 pound chicken breasts boneless and skinless
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 small flour tortillas or corn tortillas
To Serve
  • ½ cup fresh cilantro chopped
  • ¼ cup red onion diced
  • 1 avocado diced
  • 2 limes cut in wedges

Instructions

    Cup of Yum
  1. Preheat the air fryer to 380°F.
  2. In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, salt and black pepper.
  3. Rub the chicken breasts with the olive oil on both sides then sprinkle the with spice mixture, coating evenly on both sides.
  4. Place the chicken breasts in the air fryer basket. Cook for 10 minutes, turning halfway, until golden brown and cooked through. The chicken is cooked through when a thermometer reads 165°F inserted in the center of a breast. Allow the chicken to cool for 5 minutes then cut it into small pieces or shred it with a fork.
  5. To assemble the tacos, warm the tortillas in a dry skillet until soft and pliable.
  6. Divide the chicken evenly among the tortillas, then top with cilantro, red onion, and avocado.
  7. Serve immediately with lime wedges.

Notes

  • Customize the spice blend by adjusting the amount of chili powder or adding other spices like smoked paprika or cayenne pepper for an extra kick.
  • Use a food thermometer to check the internal temperature of the chicken, ensuring it reaches 165°F for safe consumption.
  • For a lower-carb alternative, serve the chicken taco filling in lettuce wraps instead of tortillas.
  • To keep tortillas warm and pliable, wrap them in a slightly damp paper towel or clean kitchen towel and heat them in the microwave for 20-30 seconds before assembling the tacos.
  • If you're short on time, use a store-bought taco seasoning packet instead of making your own spice blend. Just be aware that store-bought seasoning might have added sodium or preservatives.
  • Experiment with a variety of toppings to suit your preferences, such as pickled onions, crumbled cotija cheese, or a dollop of your favorite hot sauce.
