CHICKEN TERIYAKI NOODLES

Ingredients

  • 8 oz lo mein or rice noodles
  • 2 boneless skinless chicken breasts, sliced thin
  • 2 tablespoons vegetable oil
  • 2 cups stir-fry vegetables bell peppers, carrots, broccoli, snap peas
  • 2 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds optional
Teriyaki Sauce:
  • ¼ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons cornstarch mixed with 2 teaspoons water
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced

Instructions

Step No.1: Cook the Noodles

  1. Cook the noodles according to package instructions, then drain and set aside.
Step No.2: Make the Teriyaki Sauce
  1. In a bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and cornstarch slurry. Set aside.
Step No.3: Cook the Chicken
  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4-5 minutes until browned and cooked through. Remove from the pan.
Step No.4: Stir-Fry the Vegetables
  1. In the same pan, add the remaining 1 tablespoon of oil. Stir-fry the vegetables for 3-4 minutes until slightly tender but still crisp.
Step No.5: Combine Everything
  1. Return the chicken to the pan, pour in the teriyaki sauce, and stir well. Add the cooked noodles and toss to coat everything in the sauce.
Step No.6: Serve & Garnish
  1. Top with sliced green onions and sesame seeds. Serve hot and enjoy!

Notes

  • Best Noodles: Lo mein, udon, or rice noodles work well for this recipe.
  • Adjust Sweetness: Add more or less honey/sugar based on preference.
  • Gluten-Free Option: Use tamari instead of soy sauce and rice noodles.
