Chicken with Plum Sauce and Grilled Plums

Ingredients

  • 4 large boneless , skinless chicken breasts
  • 4 large plums , halved
  • olive oil
For the Plum Sauce
  • 1 c plum jam
  • 1 1/2 tbsp red wine vinegar
  • 1 1/2 tbsp garlic , minced
  • 1 1/2 tbsp onion , finely chopped
  • 1/4 heaping tsp.Grated Ginger
  • 1 1/2 tbsp brown sugar

Instructions

  1. Mix all ingredients for sauce in a small saucepan. Cook on low heat until bubbly and thick. Brush the plums on cuts side with sauce, and set aside.
  2. Pound chicken breasts to achieve even thickness.
  3. Brush grill with olive oil and direct grill chicken breasts for approximately 4 minutes on each side until you have nice grill marks. Move to the other side of the grill and brush both sides with plum sauce. Close the grill lid. Let indirect grill until chicken reaches 165° F (Approximately 45 to 1 hour minutes, depending on the thickness). Remove chicken and let rest. While chicken is resting, grill the plums for approximately two minutes on each side to get nice grill marks.
  4. Serve with rice pilaf and your choice of vegetable.
