Chicken Zucchini Boats

Ingredients

  • 4 medium zucchini halved lengthwise
  • 1 tablespoon olive oil
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 pound Cooked Chicken Breast shredded
  • 1 cup marinara sauce
  • 1 cup shredded Mozzarella cheese
  • salt and pepper to taste
  • fresh basil chopped (for garnish)

  1. Preheat the oven to 375°F. Prepare the zucchini by scooping out the seeds to create boats. Set aside the scooped flesh for another use.
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic, sautéing until onions are translucent. Add the shredded chicken and marinara sauce, cooking until the mixture is heated through. Season with salt and pepper.
  3. Fill each zucchini boat with the chicken mixture. Place the stuffed zucchinis in a baking dish.
  4. Top each zucchini boat with shredded mozzarella cheese. Bake in the preheated oven for 30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  5. Garnish with fresh basil before serving.
