Chickpea, Pesto, Tomato, and Mozzarella Salad

Ingredients

  • 1 chickpeas 15 oz can, drained and rinsed
  • 1/4 cup pesto
  • 1 cup grape tomatoes chopped
  • 1/4 cup mozzarella cheese chopped, fresh
  • salt to taste
  • black pepper to taste
  • 2 tablespoons basil optional, chopped, fresh

Instructions

  1. In a medium bowl, combine chickpeas, pesto, tomatoes, and mozzarella cheese. Gently stir. Season with salt and black pepper, to taste. Garnish with fresh basil, if desired. Serve.
