Chickpea Sweet Potato Boats

Chickpea Sweet Potato Boats feature roasted sweet potato halves filled with spiced, golden-baked chickpeas and topped with marinara sauce and fresh sunflower sprouts. The natural sweetness of the baked sweet potatoes pairs with the smoky paprika seasoning on the chickpeas, creating a balanced vegetarian meal or side dish. The recipe uses simple roasting techniques that soften the sweet potatoes and crisp the chickpeas for a pleasant contrast in texture. This dish is served warm and benefits from choosing larger sweet potatoes for easier stuffing and scooping.

Ingredients

  • 2 sweet potato washed and pat dried
  • 1 tablespoon olive oil
  • 1 can chickpeas drained and rinsed, 15 ounces
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ cup marinara sauce
  • 1 cup sunflower sprouts

Instructions

    Cup of Yum
  1. Preheat oven to 375°F.
  2. Slice sweet potatoes in half and brush with oil. Place sweet potatoes facing upwards on a baking sheet and bake for 30 minutes or until insides are soft.
  3. Add chickpeas to a separate baking sheet and sprinkle with salt and paprika. Bake for 10 minutes or until started to turn golden.
  4. Remove sweet potatoes and chickpeas from oven. Spread the tops with marinara sauce. Add the sprouts and then chickpeas on top. Serve warm.

Notes

  • Select large sweet potatoes for easier stuffing and scooping of the filling.
  • Test doneness by piercing the sweet potato flesh with a fork; if it penetrates easily, the potatoes are cooked through.
  • For a more caramelized flavor, bake sweet potato halves face side down on a parchment-lined baking sheet to enhance sweetness.
  • Adjust baking times according to the size of the sweet potatoes; larger potatoes will require longer baking.
