Chilate

Chilate is one of El Salvador's most traditional drinks, made from nixtamalized maize flour, ginger and allspice.

Ingredients

  • 1⅓ cup nixtamalised maize flour (Maseca)
  • 1 (2-inch / 5 cm) piece ginger grated
  • 10 whole berries allspice
  • 8 cups water

Instructions

  1. In a large non-stick saucepan, dissolve the maize flour in the 8 cups (2 liters) of water.
  2. Place the pan on a low heat. Add the ginger, allspice and mix.
  3. Bring to a boil and simmer for 25 minutes, stirring regularly and making sure that it does not stick to the bottom of the pan.
  4. Serve the drink with dulce de banana, nuegados de huevo, nuegados de yuca or nuegados de masa all topped with panela honey.
