Chimichurri Wings

These chimichurri chicken wings are amazing! These crispy, juicy wings are paired with a zesty cilantro chimichurri sauce for a fresh, vibrant kick that’s perfect for summer gatherings, as well as delicious all year long. Bake them in the oven, grill them to perfection or toss them in the air fryer. There is no marinating required, and they are ready in just 30 minutes!

Ingredients

  • 3 lbs chicken wings (or drumettes), tips removed
  • 1 tbsp coarse salt for grilling
  • black pepper to taste
  • 1 tbsp olive oil
  • ½ cup Cilantro Chimichurri for serving

Grilling Instructions

  1. Preheat grill to 350°F/200°C.
  2. While the grill is preheating, season the wings with the coarse salt, black pepper and the olive oil, and toss them all together in a bowl.
  3. If you don't have chimichurri sauce leftover in the fridge, make the chimichurri sauce while the grill preheats.
  4. Arrange the wings on the grill and grill for approximately 10-15 mins on each side until they are crispy.
  5. When the wings are crispy, remove them from the grill.
  6. Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
Baking Instructions
  1. Position the oven rack in the center of the oven, then preheat the oven to 450°F/230°C.
  2. While the oven is preheating, season the wings with the coarse salt, black pepper and the olive oil to help them crisp up, and toss them all together in a bowl.
  3. Line a large baking sheet with aluminum foil, or parchment paper, then place a cooling rack on top. Arrange the wings on the cooling rack, leaving some space in between them so air circulates and they get crispy.
  4. Bake the wings for 25-30 minutes, flipping them halfway.
  5. If you don't have chimichurri sauce leftover in the fridge, make the Cilantro Chimichurri sauce while the wings bake.
  6. When the wings are crispy, remove them from the oven.
  7. Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
Air Fryer Instructions
  1. Preheat the air fryer to 400°F/200°C.
  2. While the air fryer is preheating, season the wings with the coarse salt, black pepper and the olive oil to help them crisp up, and toss them all together in a bowl.
  3. Arrange the wings on the air fryer basket, leaving some space in between them so air circulates and they get crispy. Depending on the size of your air fryer, you may need to do this in batches.
  4. Air fry them 15-20 minutes, giving them a shake halfway.
  5. If you don't have chimichurri sauce leftover in the fridge, make the Cilantro Chimichurri sauce while the wings bake.
  6. When the wings are crispy, remove them from the air fryer.
  7. Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
