Ingredients
- 8 cups Green and Red Cabbage sliced thin and chopped
- 6 cups shredded cooked chicken rotisserie
- 1 red pepper diced
- 6 green onions sliced
- 2/3 cup slivered or sliced almonds optional
- 5-6 ounce rice noodles Soba Noodles, Udon Noodles, or Spaghetti Noodles, cooked according to package instructions
Honey Ginger Dressing:
- 3/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 3/4 teaspoon ground ginger
- 2 1/2 teaspoons salt
- 1/2 teaspoon garlic powder
- 1 teaspoon red chili flakes
- 1 lime juiced (optional)
Instructions
- Toss cabbage, shredded chicken, red pepper, green onions, and almonds into large salad bowl.
- If using noodles, cook according to package instructions and set aside.
- To make dressing, combine oil, vinegar, honey, ginger, salt, garlic powder, red chili flakes, and lime juice.
- Toss dressing with salad and add noodles, if using.
- Let chill in refrigerator for at least 1 hour. Keep for several days in refrigerator.
