Chinese Chicken Salad

A healthy gluten-free chinese chicken noodle salad made with fresh cabbage, tender chicken, and veggies all tossed in a honey ginger dressing.

Ingredients

  • 8 cups Green and Red Cabbage sliced thin and chopped
  • 6 cups shredded cooked chicken rotisserie
  • 1 red pepper diced
  • 6 green onions sliced
  • 2/3 cup slivered or sliced almonds optional
  • 5-6 ounce rice noodles Soba Noodles, Udon Noodles, or Spaghetti Noodles, cooked according to package instructions
Honey Ginger Dressing:
  • 3/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 3/4 teaspoon ground ginger
  • 2 1/2 teaspoons salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon red chili flakes
  • 1 lime juiced (optional)

Instructions

  1. Toss cabbage, shredded chicken, red pepper, green onions, and almonds into large salad bowl.
  2. If using noodles, cook according to package instructions and set aside.
  3. To make dressing, combine oil, vinegar, honey, ginger, salt, garlic powder, red chili flakes, and lime juice.
  4. Toss dressing with salad and add noodles, if using.
  5. Let chill in refrigerator for at least 1 hour. Keep for several days in refrigerator.
