Chinese Chicken Salad

Chinese Chicken Salad is loaded with shredded carrots, green onion, red cabbage over a bed of romaine lettuce. It's topped off with delicious chicken and Chinese dressing.

Ingredients

SALAD
  • 2 chicken breast boneless, skinless
  • 3 tablespoons soy sauce low-sodium
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 4 cups romaine lettuce chopped
  • 1 cup red cabbage shredded
  • 1/3 cup carrot grated
  • 1 green onion thinly sliced
  • 1/4 cup Chow Mein noodles for serving
  • 1/4 cup almonds for serving, sliced
SESAME VINAIGRETTE
  • 1/3 cup rice wine vinegar
  • 1 clove garlic minced
  • 1 tablespoon sesame oil
  • 1 tablespoon granulated sugar
  • 1 teaspoon ginger freshly grated
  • 2 teaspoons soy sauce low-sodium

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a gallon size Ziploc bag or large bowl, combine chicken, soy sauce, sesame oil and pepper; marinate for at least 30 minutes in the refrigerator.
  3. Add chicken and marinade to a baking dish. Place in oven and bake until cooked through- about 30 minutes. Let cool before cutting into bite-size pieces.
FOR SESAME VINAIGRETTE
  1. Whisk together rice wine vinegar, garlic, sesame oil, sugar, ginger and soy sauce in a small bowl; set aside.
  2. TO MAKE SALAD: Place romaine lettuce in a large bowl; top with cabbage, carrots, green onion and chicken. Pour sesame vinaigrette on top of the salad and gently toss to combine.
  3. Serve immediately, topped with chow mein noodles and almonds, if desired.
