Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons soy sauce low-sodium recommended
  • 1 teaspoon sugar
  • 2 teaspoons cornstarch
  • 3 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1 medium onion sliced
  • 2 carrots peeled and cut into slices
  • 1 cup Snow peas
  • 1 teaspoon sesame oil

Instructions

  1. Mix the soy sauce, sugar, and cornstarch in a medium bowl and set aside.
  2. Cut the chicken into ½-inch strips. Toss with the soy sauce mixture.
  3. Cook the oil and curry powder in a nonstick skillet or wok over medium-high heat for a few seconds.
  4. Cook the onion, carrots, and bell pepper for about 3 minutes.
  5. Add the chicken and stir fry for about 5 minutes until the vegetables are tender.
  6. Cover in the sesame oil and stir for about 15 seconds. Serve immediately.
