Chinese Hot and Sour Soup

Ingredients

  • 8 cups chicken broth
  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar
  • 1 (8 ounce can) sliced bamboo shoots drained
  • 8 ounces white or cremini mushrooms sliced
  • 1 tablespoon grated ginger
  • 1 teaspoon Sriracha hot sauce use up to 1 tablespoon
  • 1 teaspoon white pepper
  • 1 teaspoon granulated sugar
  • 1 block firm tofu cubed
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onion

Instructions

  1. Pour chicken broth into a 5 to 8 quart slow cooker. Stir in soy sauce, rice vinegar, bamboo shoots, mushrooms, ginger, sriracha, white pepper, sugar and tofu.
  2. Cook on low 6 to 8 hours, or high 3-4 hours.
  3. Stir in cilantro and green onions just before serving. Serve hot.

Notes

  • Add all ingredients into a large pot and bring to a boil over medium- high heat. Once boiling, cover and reduce the heat to low and simmer for 5-10 minutes.
