Ingredients
- ¼ cup fresh squeezed orange juice
- 1 tsp orange zest
- 2 tbsp white wine vinegar
- 2 tbsp soy sauce
- 1 tsp Sriracha
- 2 cloves garlic crushed
- ¼ tsp ground ginger
- ¼ cup brown sugar
- 1 lb salmon sliced into 2 fillets
- 1 red bell pepper sliced
- 1 cup carrots sliced diagonally
- 1 cup sugar snap peas
- 1 cup broccoli florets
- 4 cloves garlic sliced
- 1 cup onion sliced
Instructions
- Preheat the oven to 400°F.
- Combine the orange juice, orange zest, white wine vinegar, soy sauce, sriracha, garlic, ground ginger and brown sugar in a small saucepan on the stove over medium-high heat. Once the sauce starts to bubble, let it simmer for 3-5 minutes. Remove from the heat and set aside.
- Place the salmon in two large foil baskets on a baking sheet.
- Scatter the bell pepper, carrots, peas, broccoli, garlic and onion around each piece of salmon.
- Brush half of the orange sauce on the salmon and over the veggies.
- Reserve the remaining orange sauce for later.
- Place in the oven and bake for 10 minutes.
- Remove from the oven, stir the vegetables, then brush the remaining orange sauce on the salmon and over the vegetables.
- Place back into the oven for an additional 5-7 minutes.
