Chinese Pork Trotter in Black Vinegar (Instant Pot)

Chinese Pork Trotters cooked in sweetened black vinegar in an Instant Pot produce tender, gelatinous meat infused with the slightly sweet, tangy flavor of the vinegar and ginger. The trotters are first blanched to remove scum, then pressure cooked with ginger and black vinegar for 90 minutes. Hard boiled eggs are added to absorb the vinegar and serve alongside. After cooking, the vinegar broth is chilled and skimmed of fat before serving, resulting in a richly flavored dish often enjoyed as a savory main course.

Ingredients

  • 2 lbs pork trotters preferable fore legs, or pork knuckles
  • 150 g ginger peeled, halved and smashed, organic
  • 600 ml black vinegar Pat Chun brand, Chinese sweetened, 1 bottle
  • 6 egg hard boiled

Instructions

  1. Wash and clean pork trotters.
  2. Place pork trotters into a large pot of cold water.
  3. Bring to a boil over high heat for 5 minutes. You'll start to see brown scum float to the top of the pot.
  4. Drain the pork trotters and rinse well, removing the scum.
  5. Place smashed ginger in the bottom of the Instant Pot (pressure cooker).
  6. Add in blanched pig trotters and pour in Chinese sweetened black vinegar to cover the trotters.
  7. Replace the lid, set the vent to SEAL and set to MEAT or MANUAL on HIGH PRESSURE for 90 minutes.
  8. Let the pressure manually release and add in the hardboiled eggs, making sure they are submerged in the vinegar.
  9. To skim off excess fat, remove the trotters, eggs, ginger and pour black vinegar into a separate container. Place the vinegar into the fridge overnight.
  10. The next day, use a spoon to skim the fat off the vinegar and discard.
  11. Serve the pork trotters with hardboiled egg and a little black vinegar.
