Chinese Smashed Cucumbers

This quick and flavorful Chinese side dish is made with cucumbers which are lightly smashed then tossed with vinegar, sesame oil, salt and a pinch of sugar.

Ingredients

  • 4 small Persian cucumbers (or 1 English cucumber)
  • 2 tablespoons soy sauce
  • 2 tablespoons Nakano Natural Rice Vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • chili flakes (optional )

Instructions

  1. Using the back of a chef's knife, gently smash the cucumbers a bit. Next, cut them into bite-sized chunks.
  2. Place smashed cucumber pieces in a bowl and toss with remaining ingredients. Check for seasoning and adjust accordingly. Serve room temperature or chill to serve later.

Notes

  • You can also use the sauce on sliced cucumbers and slivered carrots for a delicious cucumber salad!
