Chipotle Black Bean Burgers - Egg Free

Chipotle black bean burgers

Ingredients

For the black bean burgers:
  • 90 g oats 3 oz
  • 1/2 red bell pepper sliced
  • 1 red onion sliced
  • 1 to tomato sliced
  • 1 tsp chipotle paste smoked
  • 1/2 tsp salt
  • 2 tsp cumin ground
  • 2 Coriander cilantro, chopped, handfuls
  • 450 g black bean cooked, 1 lb
  • 1 cashew optional, roasted, chopped, handful
  • neutral cooking oil for frying, generic cooking oil
For Serving
  • burger bap optional
  • red onion salad, tomatoes, chipotle ketchup etc, for toppings

Instructions

    Cup of Yum
  1. Blend all the burger ingredients excluding the beans and cashews.
  2. Then add in beans and process to the coarseness you prefer.
  3. Add in the cashews if using and then mould into burger shapes - they will be a little wet.
  4. Freeze the shaped burgers for a couple of hrs.
  5. Heat the frying pan with a dribble of oil.
  6. Then fry on low heat for about 5-7 mins.
  7. Flip and cook on the other side on medium heat until cooked (5-7)
  8. Serve with onions, salad green, tomatoes, burger sauces and sweet potato fries.

Notes

  • Add more chipotle ketchup or chipotle sauce as necessary when making the burger.
