Chipotle Chicken Burgers Topped with Mango Salsa

These chipotle chicken burgers are topped with fiery pepper jack cheese and fresh homemade mango salsa. Trust me, this burger is packed full of flavor and the perfect addition to your summer BBQ.

Ingredients

For mango salsa:
  • 1 ripe Mango peeled, deseeded and finely diced
  • ½ red bell pepper finely diced
  • ½ lime juiced
  • ¼ cup minced cilantro divided
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
For chicken burger:
  • 1 pound ground chicken
  • 1 whole Chipotle Pepper in Adobo Sauce deseeded and minced
  • 2 whole garlic cloves grated or finely minced
  • ½ teaspoon chili powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • 4 slices pepper jack cheese
  • 4 hamburger buns

Instructions

For mango salsa:

  1. Add mango, red bell pepper, lime juice, 2 tablespoons minced cilantro, kosher salt, and black pepper to a small mixing bowl.
  2. Mix to combine, taste and if desired, season with more salt and pepper. Set it to the side until ready to top your burgers. You can also make this ahead and store covered in your refridgetor until ready to use.
For chicken burgers:
  1. Add ground chicken, chipotle peppers, remaining cilantro, grated garlic, chili powder, kosher salt, black pepper, and smoked paprika in a medium-sized mixing bowl.
  2. Shape into 4 equal sized patties.
  3. Over medium heat, cook patties on the grill until the inside of the burger is no longer pink. The burger should feel firm.
  4. If you don't want to grill your burger, heat 1 tablespoon olive oil over medium-high heat in a 12-inch skillet, when the oil is hot add the burgers and cook until no longer pink and feels firm to the touch.
  5. Add your cheese to your burgers and let rest covered for 2 minutes to melt the cheese.
  6. To serve add one chipotle chicken burger to a bun and top with mango salsa.

Notes

  • You can make your mango salsa up to one day in advance and cover it in the fridge.
  • If your chicken burgers are very soft, add 1/4 cup panko bread crumbs to help firm up the burgers. 
  • You can use ground turkey in place of ground chicken. 
  • Add more chipotle peppers if you want your burgers extra spicy.
