Chipotle Chicken Skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast boneless; skinless
  • kosher salt to taste
  • pepper to taste
  • 3 shallots finely chopped
  • 2 garlic cloves
  • 1 cup chicken broth low sodium
  • 4 ounces cream cheese
  • 1 chipotle pepper in adobo sauce; finely chopped
  • 1 tablespoon fresh cilantro finely chopped; more for garnishment
  • Lime wedges for serving

Instructions

  1. Heat the oil in a large skillet over medium heat. 
  2. Season the chicken with salt and pepper and cook it for 6-8 minutes per side, or until brown and no longer pink in the center. Set aside.
  3. To the same preheated skillet, add the shallots and garlic. Saute for 3-4 minutes, or until the onion has softened.
  4. Pour the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for 4-6 minutes, or until reduced by half. 
  5. Stir in the cream cheese and chipotle pepper. Whisk well to obtain a creamy sauce.
  6. Return the chicken to the pan and cook for 4-6 minutes more, or until the sauce is bubbly and the chicken is heated through.
  7. Garnish with fresh chopped cilantro and serve with lime wedges.

Notes

  • Be sure to cook the chicken to at least 165 degrees Fahrenheit.
  • Store the leftovers in an airtight container in the refrigerator for up to four days.
  • For a juicier option, substitute the chicken breasts for thighs
  • Serve this chipotle chicken skillet over cauliflower rice or pasta.
  • For a dairy-free option, use dairy-free cream cheese
