Chipotle Lime Yogurt Sauce:

Instructions

    Cup of Yum
  1. In a large bowl, combine the chicken pieces, minced garlic, smoked paprika, cumin powder, onion powder, lime juice, and salt. Adjust the heat by adding chipotle peppers in adobo sauce (chopped or pureed, depending on your preference). Drizzle in the olive oil and mix until the chicken is well coated. Let it marinate for 10-15 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until browned and cooked through, about 8-10 minutes. Set aside.
  3. In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, garlic powder, reserved adobo sauce, salt, pepper, and chopped cilantro. Adjust seasoning as desired.
  4. Lay each tortilla flat and top with shredded lettuce, chicken pieces, red onion, bell peppers, shredded cheese. Finally, drizzle with plenty of the chipotle yogurt sauce. Fold the sides of the tortilla over the filling and roll tightly to close the wrap.
  5. Serve immediately or wrap tightly in foil for an on-the-go meal.

Notes

  • Chicken: I use boneless, skinless chicken thighs because they stay juicy and tender, but chicken breast works too—just don’t overcook it!
  • Chipotle Peppers: These bring heat and smokiness. One pepper is mild, two is medium, three is spicy! For just smoky flavor, use the adobo sauce only.
  • Cheese: Monterey Jack melts beautifully, but cheddar, mozzarella, or pepper jack work great too.
  • Tortillas: Flour tortillas roll the easiest. Corn tortillas tend to crack, so if using those, warm them well first.
  • Make-Ahead: You can cook the chicken up to 3 days in advance and store it in the fridge. Assemble the wraps fresh for the best texture.
  • Storage: If storing assembled wraps, wrap them tightly in foil and refrigerate for up to 2 days. For meal prep, keep the sauce and lettuce separate to prevent sogginess.
  • Reheating: If assembled, warm in a dry pan over medium heat for a minute per side. If just the chicken, microwave or reheat in a skillet.
  • Freezing: Not recommended once assembled—the lettuce and sauce won’t hold up. But you can freeze the cooked chicken for up to 3 months!
