Chipotle Corn Salsa

Ingredients

For the Corn Salsa
  • 12 ounces corn fresh or frozen
  • 1/2 bunch cilantro chopped
  • 1/3 red onion finely diced
  • 2 Jalapeno peppers seeded and diced
  • 2 limes juiced
  • 1 teaspoon salt plus more to taste
  • 1/2 teaspoon pepper plus more to taste

Instructions

  1. If the corn is frozen, thaw it by placing in a colander and running it under cool water. Place in a large bowl.
  2. Add cilantro, red onion, jalapeño, lime juice, salt, and pepper. Stir to combine.
  3. You can serve immediately, or let it sit in the fridge overnight for the flavor to strengthen.

Notes

  • Store leftovers in an airtight container in the fridge.
  • Use leftovers within a few days.
  • Remove seeds and ribs from jalapenos for a more mild salsa, leave them in for a spicier salsa.
