Chipotle Hot Salsa

Ingredients

  • 12 tomatillos
  • 4 garlic cloves peeled
  • 2 tbsp ground chili you can adjust for your spice tolerance
  • 1 ½ tsp ground cumin
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • ¾ tsp salt adjust to taste

  1. Begin by preheating your oven to 400°F. Remove the papery husks from the tomatillos and give them a quick rinse. Cut in quarter and place them on a baking sheet and roast them in the oven until they become soft and slightly charred, which usually takes about 12 minutes.
  2. You can either roast the garlic cloves alongside the tomatillos for a milder flavor or leave them raw for a spicier kick. It's all about personal preference!
  3. Once the tomatillos are done roasting, let them cool down for a moment. Then, in a blender or food processor, combine the roasted tomatillos, garlic cloves, chili, cumin, lime juice, lime zest, and salt. Pulse until you reach your desired consistency. If you like it chunky, a few quick pulses will do the trick. For a smoother texture, blend a bit longer.
  4. Taste it and adjust the salt or lime juice as needed to suit your taste buds.
  5. Transfer your homemade Copycat Chipotle Hot Salsa to an airtight container and refrigerate it for at least 30 minutes to let the flavors meld together.
