Chipotle Lime Salmon Foil Packets

Tender baked salmon in foil with a mouth watering chipotle lime sauce, fresh zucchini and juicy cherry tomatoes! All ready in under 30 minutes.

Ingredients

  • 1 pound salmon cut into 4 pieces
  • 1 cup cherry tomatoes
  • 1 medium zucchini cut into half moons
  • 1 smoked chipotle pepper in the can
  • ¼ cup olive oil
  • 2 cloves garlic
  • Zest and juice of 1 lime
  • 1 tablespoon cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt

Instructions

  1. Preheat oven to 400F.
  2. Add all the ingredients except the salmon, tomatoes, cilantro and zucchini into the bowl of a mini chopper and blend until well incorporated.
  3. Add each piece of salmon to a small sheet of aluminum foil that’s been sprayed with nonstick spray. Brush the mixture over the tops. Add the zucchini and tomatoes to a bowl and pour the remaining mixture over the top. Toss to combine, then add ¼ of the veggies next to each piece of salmon.
  4. Top with the cilantro and seal up the foil packets, then place on a baking sheet.
  5. Bake for 12-15 minutes or until the salmon is cooked through and the zucchini is fork tender.
  6. Serve with a garnish of cilantro and a squeeze of lime.
