Chocolate Banana Baked Oatmeal
This Chocolate Banana Baked Oatmeal combines old fashioned oats with cocoa powder and ripe mashed bananas for a comforting baked breakfast. The mix is moistened with almond milk, maple syrup, coconut oil, eggs, and vanilla extract, resulting in a soft, chocolatey texture with bursts of sweet banana flavor. Chocolate chips inside add melty spots, finished with a sprinkling of flaky sea salt.
Ingredients
- 2 cups old fashioned oats
- 1/4 cup cocoa powder Dutch processed or unsweetened cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups almond milk or milk of your choice, unsweetened vanilla
- 1 cup banana mashed ripe
- 1/4 cup pure maple syrup
- 1 tablespoon coconut oil melted and cooled
- 2 egg large
- 1 1/2 teaspoons vanilla extract pure
- 1/3 cup chocolate chips plus extra for sprinkling on top
- sea salt for sprinkling on top, flaky
Instructions
- Preheat oven to 350 degrees F. Grease an 8x8-inch baking dish with nonstick cooking spray and set aside.
- In a large bowl, combine the oats, cocoa, baking powder, and salt. Set aside.
- In a medium bowl, combine the milk, mashed bananas, maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk until combined.
- Add the milk mixture to oat mixture and stir until combined. Stir in the chocolate chips.
- Pour the oatmeal mixture into prepared pan and sprinkle with additional chocolate chips, if desired. Bake for 35 minutes or until oatmeal is set.
- Remove from the oven and sprinkle with flaky sea salt, if desired. Cool for 5 minutes before serving. Spoon into a bowl and enjoy!
