Chocolate Caramel Cereal Bars Recipe

Ingredients

Cereal Mixture
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup butterscotch chips
  • 2.5 cups marshmallows
  • 5 cups Oat cereal
Chocolate Topping
  • 2/3 cups milk chocolate chips
  • 1/3 cup dark chocolate chips
  • 1/4 cup butter
  • 1/2 tsp salt

Instructions

  1. Melt 1/2 cup butter in a medium saucepan over medium heat.  Once the butter has melted, you will add the peanut butter and butterscotch chips and stir until melted.  
  2. Add the marshmallows and continue cooking while stirring constantly until they have melted and the mixture is blended together. 
  3. Place the oat cereal into a large bowl and then pour the liquid mixture over the top and mix well with a wooden spoon.  
  4. Press the mixture into a baking pan prepared and lined with parchment paper.  Press it down with the back of your spoon to smooth, then set aside. 
  5. Now, you will make the topping by placing your chocolate chips and butter into a microwave-safe bowl and microwave in 20-second intervals, stirring to combine at each interval.  The chocolate is ready when it has melted and is smooth.  
  6. As soon as the chocolate is ready, you will quickly pour it over the cereal mixture in the prepared pan and spread out with a rubber spatula. 
  7. Place in the refrigerator for 10-minutes or until the chocolate is beginning to set, then remove and sprinkle the top with the kosher salt.  
  8. Return to the refrigerator and allow the chocolate to fully set before cutting into squares to serve or store for later.
