- 2.5 cups marshmallows
- 5 cups Oat cereal
Chocolate Topping
- 2/3 cups milk chocolate chips
- 1/3 cup dark chocolate chips
- 1/4 cup butter
- 1/2 tsp salt
Instructions
- Melt 1/2 cup butter in a medium saucepan over medium heat. Once the butter has melted, you will add the peanut butter and butterscotch chips and stir until melted.
- Add the marshmallows and continue cooking while stirring constantly until they have melted and the mixture is blended together.
- Place the oat cereal into a large bowl and then pour the liquid mixture over the top and mix well with a wooden spoon.
- Press the mixture into a baking pan prepared and lined with parchment paper. Press it down with the back of your spoon to smooth, then set aside.
- Now, you will make the topping by placing your chocolate chips and butter into a microwave-safe bowl and microwave in 20-second intervals, stirring to combine at each interval. The chocolate is ready when it has melted and is smooth.
- As soon as the chocolate is ready, you will quickly pour it over the cereal mixture in the prepared pan and spread out with a rubber spatula.
- Place in the refrigerator for 10-minutes or until the chocolate is beginning to set, then remove and sprinkle the top with the kosher salt.
- Return to the refrigerator and allow the chocolate to fully set before cutting into squares to serve or store for later.
