Chocolate Cashew Energy Balls

These Chocolate Cashew Energy Balls are so delicious, your family will never know they are healthy. They require only five ingredients and about ten minutes out of your busy day. They are gluten free, high protein and full of fiber.

Ingredients

  • 1 cup oats Bob's Red Mill, gluten free
  • ⅓ cup cashew I used Trader Joe's cashew butter, peanut or almond butter
  • 2 tablespoon honey
  • 2 tablespoon chocolate chips like Enjoy Life, gluten free
  • 2 tablespoon dried cherries or craisins

Instructions

    Cup of Yum
  1. Mix all ingredients in a mixing bowl.
  2. Using a small melon scooper, scoop out and use hands to form into balls.
  3. Your hands will get sticky. It helps to wash them once or twice in between rolling the balls.
  4. Place on a cookie sheet and let chill for at least 30 minutes to set.
