Chocolate Chia Pudding

Try this hearty Chocolate Chia Pudding (Keto) for some healthy meal prep this week.  It's sweet, creamy and loaded with goodness. {keto, gluten free, diary free, whole 30, paleo}

Ingredients

  • 1 ½ cup almond milk unsweetened
  • ⅓ cup cocoa powder
  • 1 teaspoon vanilla
  • ½ teaspoon Stevia extract
  • ½ cup chia seeds

Instructions

    Cup of Yum
  1. Whisk together all ingredients except chia seeds until well combined.
  2. Stir in chia seeds and mix well. Cover and place in refrigerator overnight or at least three hours. It might help to mix again after about 30 minutes of chilling to avoid clumps.
  3. Remove from fridge, place in individual containers and place back in fridge until ready to eat.  Top as desired.

Notes

  • These can be made ahead and stored in the refrigerator for 4-5 days.
