Ingredients

  • 1/4 cup chia seeds
  • 2 tablespoons cocoa powder unsweetened
  • 1 cup almond milk unsweetened
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract

  1. In a medium bowl, whisk together the chia seeds, cocoa powder, almond milk, maple syrup, and vanilla extract until well combined.
  2. Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, or overnight, until the pudding reaches a thick, creamy consistency.
  3. Once set, give the pudding a good stir. Serve in individual bowls or glasses and, if desired, top with fresh fruit or a sprinkle of cocoa powder.
