Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced, large
  • 2 cloves garlic minced
  • 1 pound ground beef lean
  • 2 tablespoons chili powder
  • 1 teaspoon cumin ground
  • 1 teaspoon oregano dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can black bean drained and rinsed, 15 ounces
  • 1 can diced tomatoes undrained, 15 ounces
  • 2 ounces dark chocolate roughly chopped
  • 2 cups beef broth low-sodium

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until softened, about 5 minutes.
  2. Increase heat to medium-high and add ground beef, cooking until browned. Drain excess fat if necessary.
  3. Stir in chili powder, cumin, oregano, salt, and pepper, cooking for another minute until fragrant.
  4. Add black beans, diced tomatoes with their juice, dark chocolate, and beef broth to the pot. Bring to a simmer.
  5. Reduce heat to low and let the chili simmer, uncovered, for 20-25 minutes, stirring occasionally.
  6. Serve the chili hot with your choice of toppings.
