Chocolate Chip Cookie Bars

These cookie bars are made from beans, casein protein, and oat flour.  If you didn’t know that there were beans in this recipe I have a hard time believing you could guess what they are made of.

Ingredients

Wet Ingredients
  • 1 can cannellini beans
  • ¼ cup maple syrup
  • 1 scoop vanilla casein protein powder
  • ¼ cup unsweetened applesauce
Dry Ingredients
  • ¼ cup oat flour
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp water
  • 2 tbsp mini chocolate chips

Instructions

    Cup of Yum
  1. Preheat oven to 350°F⁣.
  2. Drain and rinse beans. ⁣
  3. In a food processor or a blender mix everything but the chocolate chips until smooth. ⁣
  4. Spray an 8x8 with oil and pour in the batter. Top with or stir in the chocolate chips. ⁣
  5. Bake for 23-25 minutes. ⁣
  6. Let it cool completely and cut into 10 bars.
