Chocolate Chip Cookie Bars

Chocolate Chip Cookie Bars combine melted butter with brown and white sugars, eggs, vanilla, and a flour blend including baking soda and corn starch. Semi-sweet chocolate chips are mixed in and sprinkled on top before baking in an 8x8 inch pan, resulting in thick, soft bars with a chewy texture and pockets of melted chocolate.

Ingredients

  • 2 1/4 cups all-purpose flour 270g
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 1 tsp salt
  • 3/4 cup butter melted and slightly cooled, 170g, unsalted
  • 1 cup light brown sugar packed. 200g
  • 2/3 cup granulated sugar 133g
  • 2 egg room temperature, large
  • 1 tbsp vanilla extract 15mL
  • 2 cups chocolate chips 200g, semi-sweet

Instructions

  1. Set oven to 350F. Line an 8x8 inch baking sheet with parchment paper and melt the butter you'll need for the recipe in a large bowl.
  2. Add the flour, salt, baking soda, and corn starch to a medium bowl then whisk together and set aside.
  3. Pour the melted butter into a large bowl. Add the white and brown sugars and whisk together, they'll form a somewhat thick slurry.
  4. Add the eggs and vanilla to the butter mixture and mix together well.
  5. Dump the dry mixture into the wet and mix until almost combined then stir in all but a handful of the chocolate chips, mixing so they're distributed.
  6. Transfer the dough to an 8x8 inch baking dish lined with parchment paper and spread toward the edges giving it a rough smooth. Top with the reserved chocolate chips.
  7. Bake for about 35 minutes at 350F. The cookie bars are done when the edges are set and golden brown and a toothpick or skewer inserted into the center comes out mostly clean. Let the cookie bars cool in the pan for about an hour before removing and cutting.

Notes

  • Always line your baking dish with parchment paper or foil to prevent sticking; do not skip this step.
  • For a larger batch, double the recipe for a 9x19 inch pan.
  • Add walnuts or pecans for added texture and crunch.
  • Sprinkling flaky sea salt on top after baking adds a flavorful contrast.
  • For a gooey brownie-like texture, bake slightly less time.
