Ingredients

  • 1/2 cup (55 grams) old fashioned rolled oats
  • 1/2 cup (120 milliliters) milk dairy or non-dairy such as oat or almond
  • 1/4 cup (60 grams) Greek yogurt
  • 1 1/2 tablespoons (26 grams) almond butter
  • 1-2 tablespoons (12-25 grams) light brown sugar
  • 1 tablespoon (12 grams) mini chocolate chips plus more for topping
  • 1/2 teaspoon vanilla bean paste or vanilla extract
  • pinch salt
  • pinch ground cinnamon
  • Sliced bananas or strawberries for serving

Instructions

  1. In a jar or bowl, fold together the oats, milk, yogurt, almond butter, brown sugar, mini chocolate chips, vanilla, salt, and cinnamon.
  2. Cover and refrigerate 8 hours to overnight (or 4-5 hours if you are using quick oats).
  3. Serve cold and top with sliced bananas, strawberries, a sprinkling of brown sugar, and/or additional chocolate chips if desired.
