Chocolate Chip Cookies with Candied Fruit
These chocolate chip cookies are enriched with melted dark chocolate, butter, and vanilla, combined into a soft dough that’s rolled thin and baked until just set. After cooling, each cookie is topped with a smooth dark chocolate butter icing and decorated with candied fruit, adding brightness and chewiness that contrast with the rich chocolate base.

- 400 g flour
- 100 g dark chocolate black chocolate 70%
- 150 g sugar
- 1 egg
- 1 pinch salt
- 1 tsp vanilla extract

- 200 g dark chocolate black chocolate
- 50 g butter

Instructions
How to make Chocolate Cookies with Candied Fruit :
Cookies:
- Melt the dark chocolate in a bain marie and set aside until it reaches room temperature.
- Mix the soft butter with the sugar until you get a smooth and fluffy cream.
- Add the egg and mix until smooth.
- Gradually add the melted chocolate and vanilla then mix gently.
- Incorporate the flour in batches and when the dough becomes too hard to work, stop mixing.
- Add enough flour for a firm dough, though soft and not sticky.
- Wrap the dough in cling film and refrigerate for an hour.
- Preheat the oven to medium heat. Line a large baking tray with baking paper.
- Take the dough out of the fridge and roll it out into a 0.3cm (0.12 inch) thin sheet. Cut out circles with a cutter transfer to the tray.
- Bake the cookies for 8-10 minutes then leave them on a cooling rack to cool.
Icing:
- Melt the butter and dark chocolate broken into pieces in a bain marie.
- Homogenize then put a spoonful of the cream on each cookie.
- Level gently without covering the biscuits completely.
- Sprinkle dried fruit on top and your wonderful biscuits are ready.
