Chocolate Chip Pudding Cookies
These cookies bake up so thick and soft every time, thanks to the addition of instant pudding mix! It's such a simple addition to cookie dough, but it really takes them over the top!

Ingredients
- 1 cup butter room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3.4 ounces dry instant vanilla pudding mix
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips any variety
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Add the butter and sugars to a large mixing bowl and cream together with an electric mixer until light and fluffy, about 5 minutes.
- Add the eggs and vanilla to the butter and beat until just combined.
- Add the pudding mix, flour, baking soda, and salt and mix until combined. Stir in the chocolate chips.
- Use a large cookie scoop to scoop out balls of dough onto the prepared baking sheet 1 to 2 inches apart. Bake for 10-11 minutes or until edges are golden and tops are still moist, but set. Do not overbake.
- Let cool for 10 minutes on the baking sheet before transferring to a wire rack to continue cooling.

Notes
- We prefer vanilla pudding mix for a classic flavor, but you can mix things up by using other flavors of pudding mix.
- Any variety of chocolate chips will do. Press extras on top before baking for the prettiest cookies.
- There's no need to chill this dough - the cookies will bake up nice and thick either way. However, if you would like to chill the dough before baking, we recommend baking for one extra minute.
