Chocolate Chip Pumpkin Baked Oatmeal

This creamy and hearty Chocolate Chip Pumpkin Baked Oatmeal comes together quickly & makes the perfect quick breakfast on a busy fall morning.

Ingredients

  • 1 ½ cups pumpkin puree
  • ½ cup brown sugar
  • 1 egg
  • ¼ cup plain nonfat yogurt
  • ½ tsp salt
  • 1 tsp pumpkin pie spice
  • ½ tsp vanilla
  • 1 tsp baking powder
  • 1 ½ cups milk I used almond milk in mine
  • 2 ½ cups old fashioned oats
  • ½ cup mini chocolate chips

Instructions

  1. Preheat your oven to 375 degrees. Spray an 8x8 baking dish with cooking spray. Set aside.
  2. In a large mixing bowl, combine the pumpkin puree through the baking powder.Whisk until smooth, & then whisk in the milk.
  3. Add the oats and mix well. Then fold in the mini chocolate chips.
  4. Pour the baked oatmeal batter into the prepared baking dish.
  5. Bake the oatmeal for 40-45 minutes or it is golden brown and set.
  6. Cut the oatmeal into 6-8 squares. Enjoy warm or cold. You can even freeze these individually and simply heat in the microwave.
  7. Refrigerate or freeze any leftovers.
