Chocolate Covered Banana Pops

These frozen chocolate covered banana pops are a classic treat for the summer. Whether you decorate them for the 4th of July or simply serve them at your next backyard party, these choco bananas on a stick are always delicious and always welcome.

Ingredients

  • 3 ripe but firm bananas
  • 1 cup semi- sweet chocolate chips
  • 1 tablespoon coconut oil
  • ¼ cup chopped salted peanuts
  • ¼ cup Rainbow sprinkles

Instructions

  1. Peel and cut bananas in half crosswise.
  2. Insert popsicle sticks into banana halves and place them on a baking sheet lined with waxed paper.
  3. Allow bananas to freeze for 1 hour on the baking sheet.
  4. When bananas are almost frozen begin melting chocolate. In a medium microwave-safe bowl melt chocolate in 20-second increments and then add coconut oil and mix until smooth.
  5. Transfer the chocolate to a tall skinny glass.
  6. Remove bananas from the freezer. Carefully submerge the banana into the chocolate and fully coat it allowing the excess chocolate to drip back into the glass.
  7. Working quickly sprinkle your topping of choice all over the banana while the chocolate is still wet! Place it back on the lined tray to set. Once all bananas are dipped and garnished chill them in the freezer for 30 minutes and enjoy!

  • Add the sprinkles and nuts while the chocolate is warm so they will stick to the chocolate coating on the bananas.
  • Angle the bananas when placing the lollipop sticks so the sticks stay in the center of the bananas.
  • It's best to use ripe but firm bananas as overly ripe bananas will break and cause a big mess.
  • Always ensure your bananas are frozen or almost frozen before you dip them. This helps the chocolate coating solidify quickly, creating a smooth and even layer around the banana.
  • Be sure your chocolate is fresh so it melts evenly. Use a little extra coconut oil if it seems thick when melting, you want a nice runny consistency.
  • For easy cleanup work over the lined baking sheet to catch all the drips and crumbs.
