Chocolate Covered Raw Brownies

Ingredients

  • 200 g Medjool dates destoned
  • 200 g mixed nuts crushed
  • 4 tablespoon Tahini
  • 6 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 100 g dark chocolate vegan

Instructions

  1. Soak 200 g Medjool dates in boiled water for 10 minutes.
  2. Put 200 g Mixed nuts into a bag and crush them to varying sizes.
  3. Drain the dates and put them into a food processor with the crushed nuts (save some nuts to sprinkle over). Blend the dates and nuts to form a crumbly consistency.
  4. Add 6 tablespoon Cocoa powder, 4 tablespoon Tahini and 1 teaspoon Vanilla extract and blend again until the mixture comes together.
  5. Roll the mixture into balls about the size of a table tennis ball. Put onto a lined baking sheet and refrigerate for 30 minutes.
  6. Melt 100 g Dark chocolate and dip the balls into it, coating each ball fully.
  7. Sprinkle over the reserved crushed nuts and refrigerate until the chocolate has set.

Notes

  • The best extra tip I can give you for these raw chocolate brownies is make more. Make more than you think you will need, as they will go very quickly! Did I mention how GOOD they are?
  • Make sure to use the best chocolate you can for this, as so much of the flavour comes from it. We prefer dark chocolate because it gives a really rich and intense flavour.
  • Any nuts will work in this recipe, so don't buy anything special as you can use whatever you have.
