Chocolate Covered Strawberry Waffles

These chocolate covered strawberry waffles combine fresh berries tucked inside a fluffy buttermilk waffle and then drizzled with melted chocolate. The perfect breakfast or dessert!

Ingredients

For waffles:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 2 cups buttermilk
  • 1/4 cup unsalted butter melted
  • 2 teaspoons vanilla bean paste
  • 1 cup small diced strawberries
  • 1/2 cup bittersweet chocolate chips
For topping:
  • 1 cup sliced strawberries
  • ½ cup Melted chocolate
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat waffle maker according to directions.
  2. In a large bowl add flour, baking powder, and kosher salt. Whisk to combine and set aside.
  3. In a smaller bowl whisk the eggs lightly and whisk in buttermilk, melted butter, and vanilla bean paste.
  4. Pour buttermilk mixture into the flour mixture and stir to combine. Once fully combined stir in strawberries and chocolate chips.
  5. Add waffle mix to your waffle maker and cook according to manufactures instructions.
  6. Before serving top with sliced strawberries, melted chocolate and powdered sugar.
