Chocolate Covered Yogurt Bites with Blueberries & Almonds

This is a super-easy to make and guilt-free treat with delicious chocolate covered frozen yogurt bites filled with blueberries and chopped almonds.

Ingredients

For the chocolate bites:
  • 300 g strained yogurt (or Greek yogurt)
  • 50 g almonds coarsely chopped
  • 120 g berries
  • 1 tbsp coconut shredded
  • 1 tbsp honey
For the chocolate coating:
  • 300 g chocolate finely chopped
  • 1 tbsp sunflower oil

Instructions

For the chocolate bites:

  1. In a bowl, combine the yogurt, almonds, blueberries, shredded coconut, and honey, mixing with a spatula or spoon.
  2. Line a baking tray with parchment paper, take 1 tablespoon of the mixture, and place it on the tray.
  3. Repeat this process for the remaining mixture and place the tray in the freezer for 3 hours.
For the chocolate coating:
  1. In a bowl, combine the chocolate and sunflower oil, cover with plastic wrap, and melt in the microwave. Alternatively, melt the chocolate using a double boiler.
For the assembly:
  1. Remove the chocolate bites from the freezer and dip them in the melted chocolate.
  2. Place them back on the tray and let them sit until the chocolate hardens.
  3. Serve the chocolate bites immediately.
