Chocolate Cupcakes

Ingredients

  • ⅓ cup canola oil
  • 1 cup brown sugar
  • ¾ cup buttermilk
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350℉. Line a muffin tin with 12 paper liners.
  2. In a large bowl stir together oil, brown sugar, buttermilk, egg and vanilla.
  3. In a second bowl whisk together the flour, cocoa powder, baking soda, and salt.
  4. Slowly add the dry ingredients into the wet ingredients and stir just until mixed. Be careful not to overmix.
  5. Evenly divide cupcake batter into prepared muffin tin.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow cupcakes to cool completely before covering with frosting.

Notes

  • Chocolate cupcakes can be stored in a covered container on the counter for up to 4 days. 
  • To freeze, let them cool and store in a zippered bag in the freezer for up to 4 months.
