Chocolate Mascarpone Pancakes

Ingredients

  • 1 cup plain flour (all purpose flour)
  • 1 ½ teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 2 eggs
  • 3 tablespoon mascarpone
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 tablespoon sugar
  • oil or butter to fry

Instructions

  1. In a bowl, sift the flour, add the baking powder and cocoa powder.
  2. Beat the eggs well with a pinch of salt until fluffy.
  3. Add the mascarpone and use a hand blender to blend everything well until smooth.
  4. Pour it over the flour mixture, add the sugar, milk and vanilla extract, then use again the blender to get a smooth batter.
  5. Heat up a non-stick frying pan, add a drop of oil or butter, add a ladleful of batter, then cook on both sides for 1-2 minutes until fluffy.
  6. Repeat with the remaining batter.
  7. Serve the pancakes with chocolate sauce and fresh fruit.
