Ingredients

BROWNIES:
  • 1/2 cup unsalted butter , melted
  • 1 cup sugar
  • 2 large eggs , room temperature
  • 2 teaspoons vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
FILLING:
  • 1/2 cup butter , softened
  • 2 cups confectioners' sugar
  • 1 tablespoon water
  • 1/2 teaspoon mint extract
  • 3 drops green food coloring
TOPPING:
  • 12 ounces semi-sweet chocolate chips
  • 1/2 cup unsalted butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray an 8x8 inch baking pan with baking spray.
  3. Whisk together melted butter, sugar, eggs, and vanilla extract.
  4. Whisk in the cocoa powder, flour, salt, and baking powder.
  5. Spread batter evenly into greased baking pan.
  6. Bake for 25-30 minutes, then remove to a wire rack to cool.
  7. For filling, in a small bowl, cream butter and confectioners' sugar; add water, mint extract and food coloring until blended. Spread over cooled brownies. Refrigerate for 30 minutes or until set.
  8. For topping, melt chocolate chips and butter and whisk together. Spread over filling. Chill in the refrigerator for an additional 30 minutes, then cut into bars.
