Chocolate Mint Cupcakes

Chocolate Mint Cupcakes are super easy, so moist and full of peppermint chocolate flavor! Homemade with a hint of mint in the creamy chocolate frosting!

Ingredients

  • 2 cups flour
  • 1 ½ cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup cocoa powder
  • ¾ cup vegetable oil
  • 2 large eggs
  • ¼ teaspoon peppermint extract
  • ½ cup sour cream
  • ⅓ cup milk
  • crushed candy canes or peppermints for decoration, if desired
White Frosting
  • ½ cup butter or 1 stick
  • 2 cups icing or powdered sugar
  • ¼ teaspoon peppermint extract
Chocolate Frosting
  • 1 cup chocolate chips
  • ½ cup heavy or whipping cream
  • ¼ cup icing or powdered sugar

Instructions

  1. Mix flour, sugar, baking powder, baking soda, and cocoa powder.
  2. Beat in oil and eggs, then mint extract, sour cream, and milk. If mixture is too dry, add ¼ cup more water.
  3. Pour into a lined cupcake pan, up to a little over half full. Bake at 350 for 15-20 minutes or until cooked through. When cooked, fully cool.
  4. To make white frosting: Beat together all ingredients. If it isn’t smooth enough, add 2 tablespoon milk. Set aside.
  5. To make chocolate frosting: Heat heavy cream on medium on the stove top for 10 minutes.
  6. Pour in a bowl of chocolate chips, let sit, and then whisk together until smooth.
  7. Beat in sifted powdered sugar.
  8. Combine white and chocolate frosting in a piping bag, and swirl onto cupcakes.
  9. Sprinkle with crushed mints.
