Chocolate Peanut Butter Cookies
These cookies are so thick and chewy and they're everyone's favorite flavor combo - chocolate and peanut butter!
Ingredients
- 8 tablespoons butter melted
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 1/2 cups flour
- 1/3 cup cocoa powder
- 1 teaspoon espresso powder optional but recommended
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup peanut butter chips
- 1/4 cup milk chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Beat together the butter and sugars until well combined.
- Beat in the egg and vanilla until just combined.
- Add the flour, cocoa powder, espresso powder, baking soda, and salt and beat until a soft dough forms.
- Stir in the peanut butter and chocolate chips.
- Use a large cookie scoop to scoop out 12 balls of cookie dough.
- Place dough on ungreased cookie sheet and bake for 11 minutes exactly. Cookies will look slightly underdone, but will firm up as they cool.
- Cool for 5 minutes on the pan before removing to a cooling rack.
Notes
- For smaller cookies, use a medium cookie scoop and bake for 9 minutes.
