Ingredients
- 1 cup granulated sugar plus 1/4 cup for rolling the cookies in
- 1 cup peanut butter
- 2 Tablespoons cocoa powder
- 1 large egg
Instructions
- Preheat the oven to 350 F.
- Line cookie sheet with a baking mat.
- Stir together 1 cup granulated sugar, peanut butter, cocoa powder and egg until blended.
- Roll into 1" balls (or use a cookie scoop).
- Roll the cookie dough balls in 1/4 cup granulated sugar.
- Place on a cookie sheet and then press down with a fork twice to make a crisscross pattern on each cookie.
- Bake for 12 minutes until the cookies are just set.
- Allow them cool on the tray for a couple of minutes before moving to a wire rack to finish cooling.

Notes
- Store leftover cookies in an airtight container at room temperature for up to 1 week. Keep a piece of bread in the container with the cookies to keep them soft.
