Ingredients

  • 1/2 cup peanut butter no sugar added
  • 2 tablespoons butter softened
  • 3/4 cup sugar alternative like Swerve confectioners
  • 9 ounce Lily's chocolate chips
  • sea salt

Instructions

    Cup of Yum
  1. In a medium mixing bowl, combine sugar alternative, peanut butter and butter; mix well.
  2. Shape into 1-inch balls and place on a waxed or parchment paper lined cookie sheet.
  3. Chill for a minimum of 30 minutes or place in the freezer until firm.
  4. Melt the chocolate chips in a microwave safe bowl (defrost at 30 second increments) until smooth.
  5. Dip peanut butter balls and place on lined cookie sheet, then sprinkle with sea salt. Let sit until the coating hardens.
  6. Place in an air tight container and keep in the refrigerator or freezer. Enjoy!

Notes

  • Each brand of natural peanut butter has a different consistency. If you find that your peanut butter is too soft to roll in a ball, add up to 1 tablespoon of coconut flour. This will firm up the dough.
  • Each fat bomb is approximately 7 carbs and 7-8 grams of fat. I did not use all the chocolate, so it is difficult to calculate.
