Ingredients

  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup sour cream
  • 3/4 cup brown sugar , packed
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips , divided
  • 1 cup flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 12 cup muffin tin with muffin liners.
  3. In a large bowl add the pumpkin puree, eggs, vegetable oil, sour cream, brown sugar, and vanilla extract and whisk until fully combined.
  4. Into a second bowl sift the flour, cocoa powder, pumpkin pie spice, baking soda, baking powder, and salt and whisk until just combined.
  5. Add dry ingredients to the wet ingredients and whisk until just combined.
  6. Stir in 1/2 cup of chocolate chips.
  7. Using a 1/4 cup ice cream scoop, scoop the batter into each liner.
  8. Top with 1/2 cup of chocolate chips.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
