Chocolate Raspberry Muffins

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup chocolate chips or chocolate chunks
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon espresso powder
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla extract
  • 6 ounces raspberries fresh

Instructions

  1. Preheat oven to 400 degrees. Line muffin tin with papers.
  2. Add flour, sugar, chocolate chunks, cocoa powder, baking soda, and espresso powder to a large bowl. Whisk to combine.
  3. Add sour cream, milk, vegetable oil, egg, and vanilla to a medium bowl and whisk well to combine.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Gently stir in half of the raspberries.
  6. Spoon muffin batter into muffin liners, 2/3 full. Press remaining berries into tops of muffins.
  7. Bake for 15 minutes or until a tester comes out mostly clean, with just a few moist crumbs.
  8. Cool completely. Dust with powdered sugar, if desired.
