Ingredients

  • 1 cup (230 grams) whole milk ricotta
  • 3 tablespoons (21 grams) unsweetened cocoa powder
  • 1 tablespoon (15 milliliters) honey plus more for drizzling
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup (55 grams) granola
  • 1/2 cup (80 grams) fresh blueberries
  • 2 tablespoons (7 grams) unsweetened coconut flakes

Instructions

  1. In a medium bowl, whisk together the ricotta, cocoa powder, honey, vanilla extract, and cinnamon. Adjust flavors to taste.
  2. Fill the bottom of two small glasses with 1/4 of the ricotta mixture each.
  3. Top each with a layer of the granola, blueberries, and coconut flakes.
  4. Cover with the remaining chocolate ricotta.
  5. Top with the remaining granola, blueberries, and coconut flakes.
  6. Drizzle with a little honey and serve immediately.
