Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup powdered sugar plus extra for rolling
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup mini chocolate chips optional
  • 1 tablespoon milk optional, for added softness

Instructions

    Cup of Yum
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract, and continue mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough is too thick, add 1 tablespoon of milk to soften it.
  6. Fold in the mini chocolate chips (if using) for an extra chocolatey bite.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are set but the center is still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then roll them in powdered sugar while they are still warm.
  10. Once cooled, roll them again in powdered sugar for an extra snowy finish.

Notes

  • These cookies can be stored in an airtight container for up to 5 days.
  • If you want a more intense chocolate flavor, you can use dark cocoa powder or add a few more mini chocolate chips.
  • For an even richer flavor, you can replace the mini chocolate chips with finely chopped dark chocolate.
  • You can freeze the dough and bake later for up to 3 months. Roll the dough into balls, freeze them on a baking sheet, and then store them in a freezer bag. Bake directly from frozen, adding an extra minute or two to the baking time.
  • To make them extra festive, add a pinch of cinnamon to the dough for a warm spice flavor.
